From the beginning
I have to say this noodle soup is NOT Vietnamese noodle soup.
My family named it "JoJo Pho Noodle Soup." When they got tasted it first time, they had same reaction as when they tasted Pho. Ahhhhh... it feels so good!
JoJo Pho Noodle Soup is simple.
I didn't measure anything. I accidently made this noodle soup.
As usual I tried to dump things to cook in order to rid my refrigerator of leftovers.
One evening I just wanted some noodle soup.
I was scanning my food lists in my head.
I got some rice noodles, sliced pork, vegies like carrots, bok choy, onion, and leftover green curry. And I always have a bottle of fish sauce in the pantry. I wish I had bean sprouts but I didn't feel like going out to get it.
This is what I did :
Boil the water in a pot. Make sure your pot is big enough because you have to lots of vegies, meat and noodles in it.
Slice your favorite vegetables. I like bok choy, onions, carrots. You can also put zucchini and/or spinach. Mushrooms can be a good option, too.
When the water boils, put in some green curry. Start with a small amount and add more if you need to. Remember this curry is spicy! You can also use red curry.
Add fish sauce as much as you want. I have some fresh minced ginger and added it too, but that's optional
Put some meat such as slices of beef or pork or chicken. I like to put in some shrimp too. Don't have any? No worries... put some sliced ham for your kiddos. I know my kids love ham. Cook until the meat is well done. If you are a vegetarian, skip this step.
Put some dried rice noodles into the boiling broth. Cook it for about 3-5 minutes.
Add all of your vegetables into the soup. Boil for about 3 minutes or until the noodles are cooked enough.
Serve with fresh bean sprouts, Thai basil and sliced lime. You can also use chopped green onions or cilantro.
NOTE:
DO NOT use curry powder.
For this soup, you need Thai curry paste like these.
This is my first try at making it.
The first time, I put a little too much curry paste and it came out spicy. Fortunately my hubby and JuJu liked it. Believe it or not we didn't have a strong curry taste but it still changed the flavor.
The second time, I put less curry paste because we had a guest who may have not been able to handle the spice.
I also added shrimp and served the dish with bean sprouts.
Yup!
We added some Sriracha sauce to our soup. Especially mine...but I made it a bit too spicy with all of the added Sriracha. Whoops!
After enjoying the tasty meal we felt like we needed a nap.
